Meat Pair Guide: Beef
Basic Pairings
Potatoes: A classic pairing ingredient for beef's assertive taste. Try Yukon Gold potatoes for a buttery alternative or baby new potatoes for a down-to-earth mineral flavor.
Onions: Garlic, onions, leeks, scallions and shallots are strong aromatics that give beef dishes a variety of flavors: sweetness, sharpness and complexity. These vegetables are common matches for the strength of beef's natural taste.
Condiments: Soy sauce, balsamic vinegar and horseradish are all condiments that have a high level of saltiness, tartness and tang and pull the "meatiness" out of beef. These flavors pair well with the natural flavors that emerge from meat as a result of particular cooking/curing processes.
Accompaniments: Yeast breads are a wonderful pairing for beef. These breads often have distinctive yet subtle flavorings of their own, such as sourdough, rye, whole grain or just simple butter and eggs that round out a beef dish or meal.
