Turkey and Ham Couscous Salad

Ingredients
1 1/2 cups whole wheat or regular couscous
3 cups reduced-sodium fat-free chicken broth, water or fruit juice
1/2 teaspoon salt
1 cup dried mixed fruit bits
1/4 cup chopped green onions
1 tablespoon chopped fresh oregano, if desired
1/3 cup light raspberry vinaigrette
8 slices Hormel® Natural Choice® Honey Deli Ham, coarsley chopped
7 slices Hormel® Oven Roasted Turkey Breast Deli Sliced, coarsley chopped
Directions
Cook couscous according to package directions using broth and salt; cool slightly. Stir in ham, turkey, fruit bits, onions and oregano; mix well. Cover. Refrigerate at least 1 hour.
Stir vinaigrette into couscous mixture just before serving. Line medium plate with lettuce; top with salad. Serve with additional vinaigrette. Garnish with additional fresh oregano, if desired.
